During this year’s West European Fish Technologist Association conference taking place from 14-18.10.2024 in Çeşme, Türkiye, organized by EGE Üniversitesi, Dr. Eng. Olga Szulecka from the National Marine Fisheries Research Institute from Poland, in the Seafood Consumption and Consumers session, presented the results of WP1 of the project IMPRESS – Innovative approaches for marine and freshwater based ingredients to develop sustainable foods and value chains. Presentation was entitled: Fish Products Features as a Consumer Purchase Drivers discussing.
In addition to essential purchasing factors such as availability, accepted price and sensory acceptability, consumers choose fish products in terms of additional factors. The main ones are the health benefits of consuming the product, its size and the convenience of its preparation and use. In contrast, consumers pay much less attention to the environmental aspects of fish products or the brand of the products. For older consumers, additional purchasing factors are more important than for the younger generations.
