Fish festival in Niemodlin

On October 5-6, 2024, the Castle in Niemodlin hosted the Opole Provincial Carp Festival – an open-air event whose main goal is to promote carp and other fish from local aquaculture. The feast was accompanied by the Second Discussion Forum “Tasty transformation of carp”, moderated by Tomasz Kulikowski from the NMFRI Department of Fisheries Economics. Of great interest was a lecture by Dr.Eng. Bogusław Pawlikowski from the NMFRI Department of Processing Technology and Mechanization, who talked about the directions of carp processing, showing a range of new carp products that can enrich the current assortment on the consumer market and in catering.

Lectures were also very interesting: by Prof. Jarosław Dumanowski, who, together with chef Marcin Przybysz, talked about building a restaurant brand using culinary traditions and the historical aspect, and by Lidia Jażdżewska from the Fish Inn “Ruda Żmigrodzka”, who talked about her experience in running a fish farm with the expansion of services to include processing, catering, education, tourism and recreation. The Discussion Forum was accompanied by live cooking demonstrations and tastings by chefs Marcin Przybysz, Robert Sowa, Wojciech Harapkiewicz and Kamil Klekowski.

During the demonstrations, among other things, a dish inspired by the recipe “Boneless carp” from the book Compendium Ferculorum of 1682 was prepared and served. The main organizer of the event was the Local Fishery Group “Opole Region”.
